Fennel & Fig Roasted Chicken

Shared from our friends at Frigidaire Fennel & Fig Roasted Chicken Servings: 4 |  Prep Time: 15 MINS |  Cook Time: 20 MINS INSTRUCTIONS: Roasted Chicken Preheat the oven to 400°. Heat a medium-sized dutch oven (or large sauté pan) on medium heat. Add 2 Tbsp cooking oil. Sprinkle each piece of chicken with salt and pepper on both sides and sear each piece in the dutch oven, starting with the skin side down. Do 2-3 pieces at a time, making sure they aren’t touching to prevent moisture capture, which will cause the chicken to be soggy. Separate the leafy fronds from the fennel bulb and save in a bowl. Trim and dice the bulb. Discard or save the stalks for another use. Once the chicken is seared, add another Tbsp of cooking oil to the pan and sauté the garlic, diced fennel bulb and figs on low hear for 2-3 minutes. Easy Holiday Pistachio Brittle

Shared from our friends at Frigidaire   Servings: 4-6 |  Prep Time: 10 MINS |  Cook Time: 15 MINS Making a big batch of brittle can be fairly simple with the right preparation and tools. Everything comes together rather quickly with only a few simple ingredients, meaning there is more time to go off and enjoy the holidays! Instructions: Line a baking sheet with a silicone mat or greased piece of parchment. Set aside. Pre-measure all of your ingredients and have them ready to go. Set aside. Place the sugar, corn syrup, and water in a saucepan over medium-low heat. Stir until the sugar melts with a heat-safe spatula. Once the sugar melts, stop stirring and turn the heat up to high. Bring to a boil and continue to cook until the sugar mixture registers 265°F on a candy thermometer.
